Sunlight has been vilified because skin cancer results from dietary polyunsaturated oils which are changed in the skin by the sun. The problem is not the sun, but our consumption of free polyunsaturated oils. It takes 12-14 ears of corn to make one tablespoon of corn oil and the oil is altered in process from cis to trans form which favors skin cancer. Using oil lets us overeat--fried foods are tasty but they add calories and pose a health risk. The fats make the blood sticky; blood pressure goes up to keep it circulating.
